Chipotle Copycat

I get a serious kind of craving for Chipotle more times in a week than I’d like to admit.

Lunch this week consisted of a copycat version of their cilantro rice and corn salsa. It tasted as great as it looked.

I wasn’t planning on a recipe post (until several co-workers in the break room asked for it), so I simply have the cell photo I sent to my brother. I was expressing my excitement for the taste bud joy that would soon be mine. That’s what we do, text each other photos of our food and such.

It had even already made it into my fancy Ziploc container for transport to work. Snazzy, huh?

Corn salsa

Cilantro Lime Rice

Ingredients

  • 2 cups cooked rice
  • juice of 1/2 a lime
  • 1 tsp salt
  • 3 Tbsp fresh cilantro, torn
  • 3 tsp vegetable oil

Directions

Combine all ingredients until completely mixed. Make it your own, add more lime juice or cilantro as you’d like. I’m not shy about my cilantro (over)use.

 

Chipotle’s Corn Salsa

Ingredients

  • 1 12-ounce bag frozen sweet yellow corn, defrosted and drained
  • 2 medium sized jalapenos, seeded and chopped
  • 1/2 red onion, chopped
  • 3/4 cup fresh cilantro, torn
  • juice of two limes
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions

Combine all ingredients until completely mixed. Feel free to add more ingredients to fit your taste! I’m certain fresh corn would taste even more fabulous and canned corn would be just as easy as frozen. Use whatever your prefer and/or have time for!

 

I followed no exact measurements on either of these recipes, but I don’t think that most people who cook on a regular basis do. Add some black beans, sour cream and cheese and there you have it–your very own, homemade burrito bowl. Enjoy!
